Apple and Cranberry Stuffing


Who else loves stuffing? I think it is one of my favourite parts of a Thanksgiving dinner. This is such a good recipe! Sage, apple and dried cranberries makes for a perfect combination.


Ingredients:

3 Tbsp butter or oil

1 stick celery, diced

2 garlic cloves, minced

1/2 onion, diced

1/2 tsp dried thyme

1/8 tsp chili flakes

1 apple, peeled & diced

1 Tbsp fresh sage, chopped

5 cups bread, diced

1-2 tsp salt *season to taste

1/3 cup shredded cheese

1/4 cup dried cranberries

1/4 cup shredded cheddar


Servings:


Preheat oven to 350˙F.


Place half of bread in large bowl, set aside. Heat frying pan on medium heat with butter or oil. Add celery, garlic and onion and cook for 3 minutes until tender. Add thyme and chilli flakes and cook for 1 more minute. Add apple, sage, salt and half of the bread cook for 2 minutes. Pour cooked mixture overtop of other half of bread in the bowl. Add in 1/3 cup cheese and dried cranberries, stir until well combined. Place into appropriate sized baking dish. Top with remainder of cheese.


Bake for 45 minutes until cheese is a light golden brown.

Notes:

Bread: I have made this with both whole wheat bread and sourdough, both tasted great! Feel free to use whatever type of bread you'd like.


Timing: I always like to plan things ahead of time, especially if making this for a holiday. That way the day of there is very little work to do. You can make this up to two days in advance and bake the day of.
