These are so delicious! This recipe features my apricot jam recipe I posted a few weeks ago. Such a great combination of sweat and tart.
1 cup oats
1/2 cup walnuts crumbs (60g) *see notes
1/2 cup whole wheat flour
3/4 tsp salt
1/8 tsp cardamom *optional
2 Tbsp apricot jam
2 tsp vanilla
2 Tbsp honey
3 Tbsp coconut oil
1/2 apricot cardamom jam
1/4 cup oats
1 Tbsp coconut shreds
1 tsp maple syrup
1/4 tsp cinnamon
Preheat oven to 350˚F. Grease a square 8" baking dish.
Mix all ingredients for base together in a bowl. Place dough mixture evenly into prepared baking dish. Either with finger tips or spatula press down dough. Ensure it is even and top is smooth. Place in oven and bake for 10 minutes.
While base is in oven mix together all ingredients for topping in a small bowl.
Once base has baked for 10 minutes, remove from oven and spoon jam on top. Use a spatula and distribute a nice even layer. Ensure not to get too close to edges and leave a small gap this will make it easier to remove. Place topping evenly over top of jam. Put bake in the oven and bake for 20 minutes, until top is a nice golden colour.
Let fully cool before removing from pan. Carefully run a knife around the sides or use an offset spatula. Cut into 9 pieces and enjoy! Store in an air tight container in the fridge.
For the walnut crumbs take a heaping 1/2 cup of walnuts or weigh out 60g and blend in a food processor.
I have put cardamom as optional since I know i's not the most common ingredient in most peoples spice cabinets. It does add an amazing flavour though in these bars! So if you have it don't skip on it.
