Beet Hummus

Great way to get beets into your diet. They are packed with tons of essential vitamins and minerals. This is a super easy recipe that is packed with flavour. My favourite purée recipe because of the beautiful colour.


Ingredients


475g purple beets, peeled

3 tsp lemon juice

2 tsp salt

1/4 cup canola oil

2 cloves garlic

black pepper to taste



In a medium sized pot add beets and cover with cold water. Try and choose similar sized beets. Bring to a boil and cook until beets are tender, about 20-25 minutes depending on size. Once cooked save cooking liquid.


While the beets are still warm, cute beets into medium chunks and place into blender. Add 1/4 cup of the cooking liquid from the beets. You just need enough to blend smooth. Add in remaining ingredients and continue to blend until smooth.


Serve warm as a side dish or cold as a dip with crackers!
