Black Bean Chicken Salad


This is one of my go to salads to have. I love it because it is packed with flavour and it is nice a filling. This dressing makes enough for a few salads, never hurts to have some dressing on hand!

Ingredients:

2 cajun spiced chicken breasts

4 cups greens mix

1/2 cup black beans

1/2 cup corn

5 cherry tomatoes, halved

1 avocado, sliced

2 Tbsp feta, crumbled

4 Tbsp peanut lime dressing

Peanut Lime Dressing:

3/4 cup peanuts

2 Tbsp lime juice

1 clove garlic

2 tsp cumin

4 tsp balsamic vinegar

2 tsp salt

1/4 bunch cilantro

1/4 cup water

1/4 cup canola oil


For the peanut lime dressing: Combine everything in blender except oil. Blend until smooth, then slowly blend in oil. This makes enough for quite a few salads, perfect to keep handy in the fridge for future use.


Preheat oven to 375 ̇F. Place cajun spiced chicken on baking sheet and bake until fully cooked, about 15-20 minutes, depending on size. (Needs to reach an internal temperature of 165f.)


While chicken is cooking place greens, beans, corn and tomatoes in bowl. Once chicken is fully cooked, slice and set aside. Add your dressing to salad and mix. Place into salad bowl and garnish with feta, avocado and sliced chicken. Enjoy!
