Who else loves brunch? I personally am a huge fan. This is a delicious version of french toast featuring freshly picked blackberries. This is also such an easy recipe. I will be honest this is more of a healthy "ish" recipe, but hey we all deserve a treat here and there.
4 cups leftover challah bread, cubed *see notes
1/2 cup skim or almond milk
1/2 cup coffee creamer
2 tsp vanilla
1/8 tsp salt
1/4 tsp cinnamon
2 tsp maple syrup
1/2 cup pecans, roughly chopped
1 cup fresh blackberries
2 Tbsp dried cherries
1 orange, zest
Preheat oven to 375˙F. Grease a 10" square baking dish.
In small bowl mix together milk, cream, eggs, vanilla, salt, cinnamon and syrup.
In a large bowl mix together bread, pecans, blackberries and cherries. Add in milk/egg mixture. Let bread soak up all the liquid for a minute. Place into prepared baking dish. Top with orange zest.
Bake for 25-30 minutes until top is nice and crispy. Let cool for a couple minutes before serving. Optional: Serve with maple syrup and whipped cream
I used this challah bread recipe (click photo below) it is such a delicious bread for making this type of dish. Of course this dish would also work with store bought challah or a brioche loaf. But try it with freshly made challah! So rewarding making your own bread. This works best with leftover bread that is a little on the stale side.
If you do not have a 10" square baking dish an 8" one will also work, it will just be a slightly thicker.
