Blackberry Squares

Another delicious square recipe! This one features my blackberry jam recipe posted earlier this week. The base has some pecans, orange and a hint of cinnamon a very amazing flavour combination.


Ingredients:

3/4 cup ground pecans (80g)

1/2 cup whole wheat flour

3/4 cup oats

1/2 tsp salt

1/4 tsp cinnamon

2 tsp vanilla

2 Tbsp oil

2 Tbsp orange juice

1 Tbsp syrup

1 egg

1/2 cup blackberry jam


Preheat oven to 350˚F. Grease 8"x8" baking pan.


In a large bowl mix together ground pecans, flour, oats, salt and cinnamon. Mix in vanilla, oil, juice and syrup. Once fully mixed, remove 1/3 cup of mix and set aside (this will be for the top crumble). Add egg to mixture in bowl. Place mixture into prepared baking pan evenly. Ensure to press mixture into all corners of dish. Bake for 10 minutes.


Once base has cooked for 10 minutes remove from oven and carefully spread jam on top. Make sure you keep a little space around the edges (try not to touch the sides of pan, it will make it more difficult to remove). Crumble the 1/3 cup of mix set aside earlier evenly over top of jam. Bake for 20 minutes until crumble is nice and toasted.


Let cool in pan fully before carefully removing. Use a knife to run around edges to make it easier to remove. You can also cut the squares while it is still in the baking pan and remove if that is easier. Cut into 9 pieces. Enjoy! Store in an air tight container in the fridge. These also freeze well and make a great breakfast snack!
