Blondie Bars


These are my "I can't believe these are healthier! Blondie bars". These are made with half the normal amount of fat and sugar. They are so delicious, you wouldn't even realize they are healthier.


Ingredients:

1/4 cup canola oil

1 egg

2 tsp vanilla

1/3 cup honey

2 Tbsp almond butter

1/4 tsp baking powder

1/4 tsp baking soda

1/8 tsp salt

1 cup whole wheat flour

1/3 cup chocolate chips


Preheat oven to 350˙F. Line a 9"x9" pan with parchment paper or foil.


In a mixing bowl whisk together oil, egg, vanilla, honey and almond butter. In a separate small bowl combine baking powder, baking soda, salt and whole wheat flour. Mix dry mixture into wet mixture. Fold in chocolate chips. Spread batter evenly into prepared baking dish.


Bake for 20-24 minutes or until toothpick inserted into centre comes out clean. Let cool fully before slicing into 9 pieces. Store in airtight container.
