"Butterless" Butter Chicken

Yes I said it, a healthy version of butter chicken. No butter no cream!

Ingredients


Marinade

2 cloves garlic

1/4 onion, rough chopped

1 tsp fresh ginger, peeled

1 Tbsp garam masala

1 tsp chilli powder

1 tsp cumim

2 tsp canola oil

2 Tbsp greek yogurt

1/2 tsp salt


2 chicken breasts, diced

1/4 onion, small diced

1 can diced tomatoes, blended smooth (540ml)

1 can coconut milk (14oz)

1 Tbsp honey

2 tsp salt

1 tsp chilli powder

2 Tbsp cilantro, chopped


Combine all ingredients for the marinade in food processor and blend smooth. Rub into diced chicken breasts. Set aside, leave to marinade for 45 minutes.


Once chicken has marinated heat pot with small amount of oil on high. Add marinated chicken and diced onion. Cook for 2-4 minutes until chicken is nicely seared. Add in remaining ingredients everything except the cilantro. Lower heat to medium low and simmer for 40 minutes. You want to fully develop all the flavours and thicken.


Best served with basmati rice and or naan bread. Enjoy!
