Chicken Kale Caeser

Who else loves a good caesar salad? This is such a delicious combo, the creaminess of the dressing paired with the crisp kale. Also a very simple a quick recipe! Enjoy


Ingredients:

1 bunch kale, chopped

3 chicken breast

1 apple, thinly sliced

2 Tbsp parmesan

3 Tbsp pumpkin seeds


Dressing:

2 egg yolks

1 small garlic clove, minced

2 Tbsp lemon juice

2 Tbsp powdered parmesan

4 cracks fresh black pepper

2 tsp dijon mustard

2 tsp Worcestershire sauce

1 tsp red wine vinegar

1 Tbsp tahini

1/4 cup canola oil


Servings: 3


Preheat oven to 350˚F.


For the dressing add all ingredients into a mason jar except the canola oil, and shake until well mixed. Gradually add the oil and shake until smooth.


Place chicken breast on parchment lined baking sheet. Season with salt, pepper and lightly oil. Bake it for 15-20 minutes until fully cooked, depending on how big your chicken breasts are. Slice chicken breast and set aside.


In a bowl toss together kale, parmesan and apple. Place neatly on a plate. Garnish with pumpkin seeds and chicken breast. Enjoy!
