Chicken Meatballs

This is my healthy version of meatballs! Still flavourful, delicious and cooked in a herbed tomato sauce. Also see my notes below in what to pair this recipe with! My favourite combo is with my herb pull apart bread.


Ingredients:

Meatballs

400g ground chicken

1/4 onion, diced small

1 garlic cloves, minced

pinch red chilli flakes

2 tsp salt

1/2 tsp dried basil

1/2 tsp dried thyme

2 tsp lemon juice

1 egg

2 Tbsp powdered parmesan

1 cup oats, coarsely ground


Sauce

1/4 onion, diced

1 garlic clove, minced

1 Tbsp balsamic vinegar

1 19oz can diced tomato, blended smooth

pinch dried thyme

pinch dried basil

pinch dried oregano


2 Tbsp low fat shredded cheese

1 tsp fresh herbs (I used oregano)


Preheat oven to 350˚F.


In large bowl mix together all ingredients for meatballs. Either with gloved hands or clean hands form into about 2 Tbsp sized balls, I got 10 meatballs. Set aside. Ensure to sanitize your workspace well after completion of meatballs.


Heat a cast iron skillet with a tiny amount of oil. Add meatballs once warm and sear all sides as best as you can. Once sides are seared add onion and garlic to pan. Remove pan from heat and add balsamic and tomatoes. Since you pan is so warm careful when pouring this in. Sprinkle with spices and place in the oven.


Bake for 15 minutes. Remove from oven and rotate meatballs and sprinkle with cheese. Place bake in oven for another 15 minutes.


Garnish with fresh herbs!

Notes:

You have plenty of ways to enjoy this dish! Either serve as is on its own, with a side salad, with pasta or my favourite with bread. I made this with my herb pull apart bread and it was the perfect combination. The bread was great to mop up all the tomato sauce with!
