Chicken Quesadilla

This is a delicious meal prep friendly recipe! Ready in 20 minutes!

Ingredients:

6 whole wheat tortilla wraps

1/2 cup cheese


Chicken Filling:

2 chicken breasts, diced

2 Tbsp chilli powder

2 tsp cumin

1 tsp garlic powder

1 1/2 tsp salt

1 Tbsp paprika

1/2 red onion, sliced

1 red pepper, sliced

2 Tbsp lime juice

2 Tbsp red wine vinegar

1-2 tsp Valentina hot sauce

2 tsp ketchup

1/4 bunch cilantro, chopped


In a bowl mix together diced chicken with all the dried spices. Heat small amount of oil in a pot on high. Add chicken and cook for 2 minutes. Add peppers and onions and cook for 2 more minutes. Add in vinegar, lime juice, Valentina and ketchup cook for 5-8 minutes until chicken is fully cooked. Once fully cooked stir in cilantro.


Lay out as many tortillas as you wish, on one side of tortilla place a handful of cheese followed by filling and one more layer of cheese on top. Fold it over.


Heat a non stick frying pan on low, cook each side of tortilla 4 minutes until nice and golden and cheese is melted.



Meal Prep Idea: This makes a fair amount of filling, generally my partner and I wont eat it all in one go. You can keep the filling in the fridge ready to go for a quick meal.
