Chocolate Cherry Cupcakes

I will be honest... These are not the healthiest but I feel strongly everyone still needs to have a good chocolate cake & cupcake recipe for special occasions. This recipe is a play off a cake recipe that I will ALWAYS make for birthdays or anytime a cake is needed. Because lets face it for a birthday people want the full chocolaty version!


Ingredients:

1 1/2 cups brown sugar

1 3/4 cups all purpose flour

3/4 cup cocoa powder, sifted

1 1/2 tsp baking powder

1 1/2 tsp baking soda

1 tsp salt

2 eggs

1 cup almond milk

1/2 cup canola oil

2 tsp vanilla

1 tsp almond extract

1 Tbsp instant coffee

1 cup boiling water

20 cherries, pitted & chopped (1 per)

40 large chocolate chunks (2 per)


optional whipped cream garnish

1/2 cup whipping cream

1/2 tsp vanilla extract

2 tsp icing sugar

block chocolate for shaving


Yields: 20 cupcakes


Heat oven to 350˚F. Add cupcake liners to muffin tins.


In large bowl mix together sugar, flour, cocoa powder, baking powder, baking soda and salt. Whisk in eggs, milk, oil, vanilla and almond extract. In a measuring cup combine bowling water and instant coffee, whisk this into batter. The batter does seem runny that is normal. I like to pour batter into large measuring cup to easily pour into prepared muffin tins. Only fill 3/4 of the way, save a little room for cherries and chocolate.


Once batter is in muffin tins, add one chopped cherry and 2 chocolate chunks to each. Lightly stir around with a cake tester.


Bake for 18 minutes or until tooth pick inserted into centre comes out dry.


For optional whipped cream topping, whip cream to stiff peaks. Add icing sugar and vanilla. Pipe onto cupcakes. Shave chocolate on top for garnish. Make sure cupcakes are cold before garnishing. This tastes delicious with or without the cream! Leave off the cream if you would like to be able to freeze these.

Note: This is also great in cake form. To make this recipe as a cake simply pour into 2 9" circular cake pans, and distribute the cherries and chocolate chunks evenly between the two. Bake for 30-35 minutes, until tooth pick comes of clean. Also for garnish make double the amount to fully coat cake! Enjoy. Also add some extra cherries for garnish!
