Cranberry Baked Oats


This is a super easy and flavourful recipe. Love this combination of spices with the cranberries!


Ingredients:

2 cups oats

3 Tbsp ground flaxseed

1 1/2 tsp baking powder

1/2 tsp salt

1/8 tsp ground cloves

1/2 tsp cardamom

1 tsp cinnamon

1 1/2 cups rasins

1 1/2 cups almond milk

1 egg

1 Tbsp coconut oil, melted

2 Tbsp orange juice

2 Tbsp maple syrup

1/8 tsp almond extract

1/4 cup pecans, chopped

1/2 cups cranberries

2 Tbsp brown sugar


Preheat oven to 375˙F. Grease a 8" square baking sheet.


In a bowl mix together oats, flaxseeds, baking powder, spices and raisins. Mix in milk, egg, oil, orange juice, syrup and almond extract until well combined. Stir in pecans and cranberries. Pour into prepared baking dish. Top with brown sugar.


Bake for 30 minutes until top is nice a golden and oats have set. Garnish with optional maple syrup and enjoy!
