Cranberry White Chocolate Muffins

This muffin is so good! I love all of the spices in these muffins. It tastes like little bites of winter. One of my favourite muffin recipes! Also I love using this spice combination for baking this time of year.


Ingredients:

1 3/4 cup whole wheat flour

1 tsp baking soda

1 tsp salt

1 tsp coriander

2 tsp cinnamon

1/2 tsp cloves

1 1/2 tsp cardamom

1/8 tsp white pepper

1/4 cup sugar

2 eggs

2 tsp vanilla

1/4 cup canola oil

1 Tbsp lemon juice

1/4 cup orange juice

3/4 cup almond milk

1/4 cup honey

1 1/2 cup cranberries

1/2 cup white chocolate chips


Preheat oven tp 400˙F. Grease muffin tins.


In large bowl mix together flour, baking soda, salt, spices and sugar. Whisk in eggs, vanilla, oil, lemon juice, orange, milk and honey. Once fully mixed stir in cranberries and chocolate chips. Spoon batter into greased muffin tins 3/4 full.


Bake for 12-15 minutes or until tooth pick inserted into centre comes out clean. Sprinkle tops with a pinch of sugar. Let cool 10 minutes then remove from muffin tins and fully cool on wire wrack. Enjoy! Store in airtight container in the fridge or freezer.
