Crispy Bacon Brussels Sprouts
Brussels sprouts are such a great side dish! This dish has so much flavour, crispy bacon fried with brussels sprouts topped off with a walnut bread crumb.
Ingredients:
Crumb:
80 g bread, any type works
2 Tbsp parmesan cheese
1 garlic clove, crushed
1/4 tsp dried thyme
1/8 tsp salt
1 Tbsp canola oil
1/4 cup pecans
150g double smoked bacon, sliced
1lb brussels sprouts
2 tsp balsamic vinegar
salt
1/2 lemon, zested
Preheat oven to 350˚F.
For crumb: Best to either use stale bread or you can dry out bread in oven. I used a whole wheat bun and left in the oven for 5 minutes until crispy. Crumble bread into a food processor along with remaining crumb ingredients. Blend coarse. Some small chunks is ok. Set aside.
Heat cast iron pan on medium high heat. Once hot add bacon, cook for 3 minutes until slightly crispy and charred. Add brussels sprouts and lightly season with salt and cook for 2 minutes. Add vinegar and the zest of half a lemon, stir in. Place crumb mixture evenly on top. Place in the oven and bake for 20-25 minutes until crumb mixture is crispy and a light golden brown colour.
