Fluffy Garlic Herb Naan Bread

This is a very simple and fluffy naan bread recipe! The garlic herb oil is optional but very delicious. This is a recipe from my upcoming cookbook healthy classics, if you haven't already go check it out!

A note: This works best in a cast iron pan, but I have tested in a regular pan as well and it works fine. Just keep an eye on the heat level.


Ingredients


2 Tbsp warm water

1/2 tsp active dry yeast

1 1/2 tsp honey

2 cups flour

1/2 tsp baking soda

3/4 tsp baking powder

1 tsp salt

1/2 tsp dried basil

1 tsp garlic powder

3 oz warm skim milk

1/2 cup plain greek yogurt


Optional:

1 tsp olive oil

2 Tbsp cilantro, chopped

1 garlic clove, minced

Mix together warm water, yeast and honey, let sit for 15 minutes. In a large bowl mix together flour, baking powder, baking soda, salt, garlic powder and dried basil. With a fork gradually mix in water yeast mixture, milk and yogurt. Mix until dough forms a ball. Knead a couple times before placing in bowl and covering with cling wrap. Let sit at room temperature for 1 hour.


Once dough has rested, portion into 4 pieces. Roll each piece out to an oval 1/4 inch thick.


Heat cast iron skillet until smoking hot, add just a tiny amount of oil. Carefully place piece of naan into skillet. Cover with lid and cook for one minute. Flip and cook for one more minute uncovered. Each side should be nice and crispy. Set aside and repeat with each portion dough. May need to lower heat for last 2 portions, pan will get very hot by this point.

For optional Topping: Mix together oil, cilantro and garlic. Brush on top of finished naan, enjoy.
