Fresh Pasta 101

I love to make my own pasta, it is such a rewarding feeling. This recipe has been tested with both whole wheat flour and regular all purpose flour. I use a simple hand crack pasta machine and it works wonders. You can make all types of pasta with this.
Ingredients
2 cups whole wheat flour
1 tsp salt
2 whole eggs
5 egg yolks
2 tsp olive oil
Servings: 2-3
Put flour and salt onto a clear countertop and make a well in the middle. Pour eggs, yolks and oil into well.

With a fork mix eggs with the flour.

Mix until it forms a ball. Start kneading dough until elastic consistency is achieved. Wrap dough with cling wrap and let sit for 30 minutes. This is a very important step, you need to let the dough rest.
Once dough has rested slice off small portions at a time leaving remainder wrapped. First press dough down with hands until flat enough to fit through the dough roller. You nay need a little flour to help it through the machine. Start on the lowest setting and continue working your way up. I like to leave the dough a little thick so i stick to the 7 or 8 setting max. Once dough is rolled out, put it through the cutter section of pasta machine. My favourite is the fettuccine.

Ensure you are placing the noodles into a floured dish to ensure they do not stick.

Once the noodles are ready, bring a pot of salted water to boil. Drop noodles into boiling water and cook about 3-5 minutes. Fresh noodles do not take long at all.
