Fudge

Fudge is so delicious. Here are two different recipes that are both so good. Peppermint mocha & rocky road.


Ingredients:


Peppermint Mocha Fudge

3 cups semi-sweet chocolate chips

400ml sweetened condensed milk

1/4 cup butter

2 Tbsp instant coffee mixed with 1 Tbsp boiling water

1/2 tsp mint extract

Garnish:

Smokey salt


Rocky Road Fudge

3 cups milk chocolate chips

400ml sweetened condensed milk

1/4 cup butter

1/2 tsp vanilla

Garnish:

2 cups mini fruity marshmallows

1/2 cup peanuts, coarsely chopped


It is the same procedure for both versions of these fudge recipes.


Line 9" square bake dish with parchment paper, set aside.


In medium sized pot bring small amount of water to boil, this will be your double boiler to melt your chocolate. Add all ingredients to a bowl (except the garnish) and place bowl over top of boiling water. Ensure your pot is not too big, you don't want your bowl touching the water you want it hovering above the water. Stir with a spatula and ensure everything is well mixed, stir until chocolate is fully melted. For Rocky Road: At this point stir in marshmallows and peanuts.


Pour chocolate mixture into prepared baking sheet. For Peppermint Mocha: At this point sprinkle top with coarse smoky salt. Place in fridge and let fully set about 2-3 hours. Once fully set remove fudge from bake dish. Slice into desired sized pieces. Store in airtight container in the fridge. Enjoy!
