Homemade Tomato Soup

This is a simple yet delicious recipe for homemade tomato soup. Also included is a simple grilled cheese recipe. Such a classic combination.


Ingredients:

Tomato soup

2 garlic cloves, crushed

1/2 onion, diced

1 tsp oregano

1 tsp dried basil

1/2 tsp dried thyme

1 tsp balsamic vinegar

1 can diced tomatoes 28oz

1/2 cup light coconut milk

1 1/2 tsp salt


Grilled cheese

8 small slices sourdough

4 sliced aged cheddar

2 tsp dijon mustard

2 Tbsp butter


Servings: 2


Preheat oven to 350˙F.


Heat small amount of oil in a pot. Add garlic, onion and herbs cook for 4 minutes until tender. Add vinegar, tomato, coconut milk and salt. Lower heat to a simmer and cook for 20 minutes. Blend with a hand blender until smooth. Adjust seasoning to taste.


For grilled cheese lay out sourdough and spread mustard on one side of each. Place cheese in centre and close. In non stick pan heat butter on medium low heat. Add sandwiches and cook until lightly brown. Flip over and place in oven for 5 minutes or until cheese is fully melted and other side of sandwich is lightly browned. Cut each sandwich in half and enjoy!


We had smaller slices of sourdough so we did 8 slices to make 4 sandwiches, 2 each. Would also work great with 4 large slices sourdough, 1 each!
