Jam Stuffed Muffins


I don't know about you but I love jam on anything & everything! Why not stuff it into some muffins. For this recipe I did 5 different types of jams just to see what one I liked best. The result? They were all delicious.


Ingredients:

1 cup quick oats

3/4 cup whole wheat flour

1 tsp baking soda

1 tsp cinnamon

1/8 tsp salt

1/4 cup canola oil

1 tsp vanilla

1 egg

2 Tbsp honey

1/2 cup almond milk

7-8 spoon fulls jam of choice


Makes: 7-8 muffins


Preheat oven to 425˙F. Grease muffin tins.


Mix together oats, flour, baking soda, cinnamon and salt. Whisk in oil, vanilla, egg, honey and milk. Spoon batter into grease muffin tin about 1/4 full. With a spoon lightly press down in the centre of each to provide a little hole. Spoon about 1 heaping tsp of jam on top of each. Top with more batter about 1 heaping Tbsp, just enough to cover jam fully.


Bake for 12 minutes, or until tooth pick inserted comes out clean. Let cool 5 minutes in muffin tins before removing. Cool fully on a wire rack before storing. Enjoy! Let me know what jam flavours you try it out with!
