Lemon Blueberry Loaf

This is a super light a fluffy loaf! Subtle lemon flavour, for sure a must try. I love this flavour combination. This is not too sweet, a perfect low sugar treat.


Ingredients

1 3/4 cup whole wheat flour

1 tsp salt

2 tsp cinnamon

1 tsp baking soda

1 tsp baking powder

3 lemons, zest

2 lemons, juice

2 eggs

1/4 cup canola oil

2 Tbsp vanilla

2 Tbsp syrup

1/4 cup honey

1/2 cup almond milk

1 cup blueberries, frozen

1 tsp whole wheat flour

Preheat oven to 350˚f. Grease and flour 9" loaf pan.


In a small bowl toss blueberries with 1 tsp flour, set aside.


In large bowl mix together flour, salt, cinnamon, baking powder, baking soda and lemon zest. Whisk in eggs, oil, vanilla, lemon juice, syrup, honey and milk. Fold in blueberry & flour mixture. Pour batter into prepared loaf pan.


Bake for 50 - 60 minutes, or until toothpick inserted into centre comes out dry. Let rest in loaf pan for 15 minutes before removing. Place on wire rack and cool fully, before slicing. Store in fridge or freezer.
