Mashed Potatoes


Everyone needs a good mashed potato recipe! I have always loved mashed potatoes.


Ingredients:

2lb russet potatoes peeled & large diced (2 large potatoes)

1 cup 2% milk

1 sprig sage

1 sprig thyme

2 tsp butter *optional

1/4 tsp dried thyme

1/2 tsp salt

1/8 tsp paprika

handfull chives, sliced *optional garnish


Place peeled and diced potatoes into a pot and fill with cold salted water. Bring to a boil and cook until potatoes are fork tender.


While potatoes are cooking bring milk, fresh thyme, fresh sage and optional butter to a simmer on low heat. Simmer for about 7 minutes. Do not let boil, you do not want to burn it.


Once potatoes are tender drain from water. Remove fresh herbs from milk and pour into potatoes. Add salt, dried thyme and paprika. Mash potatoes with a masher or a an electrical hand whisk. Mash until smooth. Season to taste. Garnish with chives!

Variations:

Feel free to make this with half milk and half cream! If you prefer a creamier mash.


Butter is optional, I have made with and without. Both taste great, just depends if you are trying to make it a little healthier! Depends on the occasion.
