Peachy Pancakes

Servings: 2
Ingredients:
1 cup all purpose flour (whole wheat would also work)
1/2 tsp salt
1 3/4 tsp baking powder
1/2 tsp cinnamon
1 egg
1 tsp vanilla
1 Tbsp honey
3/4 cup almond milk
2 peaches, pitted & sliced thin
pinch brown sugar
1 lemon, zest *optional
In a bowl mix together flour, salt, baking powder, lemon zest and cinnamon. In separate small bowl mix together egg, vanilla, honey and milk. Gradually add wet ingredients into dry mixture until just mixed.
Heat griddle or pan with a tiny bit of oil. Add ladle of batter to pan. While first side is cooking arrange peaches on top of raw batter in a pinwheel formation and sprinkle with brown sugar (see photo below). Cook for 2 minutes, or until small bubbles appear and bottom is a nice golden colour. Carefully flip pancake and cook 2 minutes. Remove pancakes and wipe out pan before repeating this step with each pancake.

Serve peach side up with syrup and enjoy! Garnish with a little lemon zest for a little extra flavour.
