Piña-colada


I have always loved piña-coladas. They are so refreshing and delicious. Here is a super simple recipe to bring the happy hour to you!


Ingredients:

150g pineapple chunks, frozen

1/2 cup light coconut milk

2 Tbsp pineapple juice

splash lime juice

2 Tbsp rum of choice

1 Tbsp honey

1 pineapple wedge, garish

1 mint sprig, garnish


Blend together pineapple, coconut milk, pineapple juice, lime juice, rum and honey. Taste and adjust honey levels as desired.


Serve in chilled glass and garnish with pineapple wedge and mint sprig. It's that simple!
