Plum & Blueberry Baked Oatmeal


I have always loved making oats in the morning. And this way just makes it so good and perfect for a simple yet delicious meal.


Ingredients:

2 cups quick oats

1/4 cup walnuts, chopped

1 1/2 tsp baking powder

2 tsp flaxseed

1/2 tsp salt

1 tsp cinnamon

1 1/2 cups almond milk

3 Tbsp honey

1 egg

1 Tbsp vanilla

2 Tbsp canola oil

1/2 cup raisins

1/2 cup blueberries

2 plums, sliced thin


Servings: 4


Preheat oven to 375˙F. Grease a 9" x 13" baking dish.


Mix together all ingredients in a large bowl except for sliced plums. Pour oat mixture into baking dish. Line plums along the top neatly in 3 rows lengthwise. Optional: Sprinkle plums with a handful of brown sugar.


Bake for 25 minutes. Allow to cool slightly before serving. For an added touch of sweetness serve with maple syrup.
