Pomegranate Arugula Salad

This salad is so light and refreshing. I think this dressing is my new favourite.


Ingredients:

1 pomegranate, seeded

2 tsp white wine vinegar

2 Tbsp honey

6 Tbsp canola oil

1/8 tsp cardamom

1/4 tsp salt

pinch white pepper

3 cups arugula

1 mandarin orange, large diced

2 Tbsp pumpkin seeds

2 Tbsp crumbled feta



Servings: 2


For dressing simply combine 1 cup pomegranate seeds, vinegar, honey, oil, cardamom salt and pepper in a blender and puree smooth. Strain dressing through a mesh strainer to remove the small seeds. This makes enough for quite a few salads.


Toss together arugula, a Tbsp or 2 of dressing, 1/4 cup pomegranate seeds and orange. Plate neatly and garnish with pumpkin seeds and feta.

Notes:

This salad is also good with beets! Simply boil beets until tender, remove skin. Cut into small chunks, toss in oil, salt, honey, lemon zest and chilli powder. Let cool fully and then mix into salad! This is great as more of a meal then a side!
