Pumpkin Cookies


These are so soft and gooey! Peanut butter cookies with a little bit of pumpkin and spiced with all the fall flavours.


Ingredients:

1/2 cup honey

1/2 cup peanut butter

1/4 cup almond butter

1/4 cup pumpkin puree

2 Tbsp vanilla

2 eggs

1/8 tsp cinnamon

1/8 tsp nutmeg

pinch cloves

pinch ginger

1/2 tsp baking soda

2/3 cups whole wheat flour

1/2 cup white chocolate chips

pinch maldon salt


Preheat oven to 350˚F.


In a mixing bowl whisk together honey, nut butters, pumpkin, vanilla, eggs, spices and baking soda. Fold in flour until well mixed. Stir in chocolate chips. Spoon batter onto non stick baking sheet, you will need to baking sheets. You should be able to get about 15 cookies. Sprinkle each cookie with Maldon salt.


Bake for 8-10 minutes. Cookies will still be a little soft when they come out of the oven. Let cool for 10 minutes then transfer to a wire rack and fully cool.
