Pumpkin Spiced Pancakes


Time for some more pumpkin spiced food! These protein pancakes have all the flavours of fall packed into them. It's a healthy and seasonal stack.


Ingredients:

3/4 cup whole wheat flour

2 Tbsp vanilla protein powder

1/4 tsp cinnamon

1/8 tsp ginger

1/8 tsp nutmeg

pinch cloves

pinch of salt

3/4 tsp baking powder

2 Tbsp almond butter

1 tsp maple syrup

1 egg

1/2 cup almond milk

1/2 tsp vanilla

1/4 cup blueberries


Servings: 1


In a bowl combine flour, protein powder, spices and baking powder. Whisk in almond butter, syrup, egg, almond milk and vanilla. Heat a non stick skillet or griddle with small amount of oil. Ladle batter onto skillet and place a couple blueberries into batter on the top and cook for about 2 minutes on medium high heat or until nice and golden colour. Flip and cook other side for 2 minutes. Repeat until batter is gone.


Garnish with maple syrup and enjoy!
