Pumpkin Waffles

I love fall. All of the fall flavours gets me super excited. Its the perfect reason to start putting pumpkin in everything! Anyone else get pumpkin fever in the fall?


1 cup all purpose flour

1 tsp baking powder

1/4 tsp cinnamon

1/8 tsp nutmeg

pinch dried ginger

1/4 tsp salt

1 egg

1/2 cup pumpkin puree

2 Tbsp canola oil

1 Tbsp maple syrup

3/4 cup almond milk

2 Tbsp pecans, toasted & coarse chopped

syrup, garnish

icing sugar, garnish

Servings: 2

Preheat waffle iron.

In a bowl mix together flour, baking powder, cinnamon, nutmeg, ginger and salt. In a smaller bowl whisk together egg, pumpkin, oil, syrup and milk. Whisk wet mixture into dry mixture until just combined.

Spoon batter onto preheated greased waffle iron. Cook until golden and crispy. Repeat until batter is gone. Garnish with pecans, syrup and optional dusting of icing sugar. Enjoy!
