This is an amazing comfort meal. Perfect for a family style dinner or your just having a roast chicken craving! This is my go to BBQ spice mix I like to use.
1 whole chicken
1 tsp garlic powder
1/4 tsp onion powder
1 Tbsp cumin
1 Tbsp chilli
2 Tbsp brown sugar
1 tsp salt
1/2 tsp red chilli flakes
2 tsp coriander
1 tsp oregano
2 tsp paprika
1 lemon, zest
1 lemon, quartered
1 head broccoli, cut into florets
4 carrots, large diced
Mix together all spices for bbq spice in small bowl. Rub all surfaces of chicken with bbq spice mix and place on parchment lined baking sheet. Ensure you wear gloves or wash your hands well before and after. Make sure to get the spice into all little areas of the chicken. Wrap with cling wrap and place in the fridge overnight.
Once chicken has marinated over night. Preheat oven to 250˚F. Stuff inside of chicken with thyme and 2 lemon wedges and place other 2 wedges on each side of chicken.
Bake at 250˚F for an hour and a half. While chicken is roasting cut your vegetables and toss in a bowl with salt and pepper.
Once chicken has been in oven for 1hr30mins raise temperature of oven to 325˚F and add vegetables. Bake for another 40 minutes. Test chicken before removing, you will know its done when the thigh can easily pull away from sides.
Also great to serve with roasted potatoes and a side salad depending how many people you are feeding!
If you are unsure about telling the doneness of chicken you can use a thermometer. Insert at thickest point, needs to read 165˚F. Make sure thermometer isn't touching the bone.
