Shortbread is a classic holiday cookie! This one is made with a little lemon zest and vanilla. It is so delicious and crumbly, you will love it!
3/4 cup butter, soft
1/4 cup icing sugar, sifted
1/4 cup brown sugar
1 tsp vanilla
1 tsp salt
zest of 1 lemon
1 1/4 cup all purpose flour
Preheat oven to 325˙F.
In a mixing bowl cream together the butter and both sugars. Mix until smooth. Stir in vanilla, salt and lemon zest. Add in half the flour and mix until incorporated. Add in remainder of flour and mix into dough. It will be slightly crumbly. Put onto counter and press into a ball.
Roll out dough to 1/4" thickness. Using cookie cutters cut out desired shapes. Try to get as many in as possible on rolled out dough. Remove out cookies and place onto a parchment lined baking sheet. All remaining dough trimming press back into a ball and re roll out. And cut out more cookies. Repeat until you have used up all the dough.
Bake for 12 minutes. Cookies will still be slightly soft. Let cool 5 minutes on sheet before removing and fully cooling on a rack. Store in air tight container on the counter. Enjoy!
