It’s that time of year again for strawberries! This has hints of cardamom and lemon and is so light and fluffy. My favourite loaf recipe so far!
1 3/4 cups all purpose flour
1/4 cup sugar
1 tsp baking soda
1/4 tsp cardamom
1/2 tsp salt
1/4 cup canola oil
2 tsp vanilla
3 Tbsp lemon juice
1 cup unsweetened almond milk
1 1/2 cups strawberries, sliced
1/2 cup white chocolate chips
Preheat oven to 350F. Grease a loaf pan.
In large mixing bowl combine flour, sugar, baking soda, cardamom and salt. Whisk in oil, egg, vanilla, lemon juice and almond milk. Whisk until just mixed. Fold in strawberries and chocolate chips. Pour batter into greased loaf pan.
Bake for 1 hour or until tooth pick inserted into centre comes out clean. Let cool in loaf pan for 15 minutes. Run a knife around outsides before carefully removing from pan. Place on a wire rack and cool fully. Enjoy!
