This is a light and refreshing dessert. This is so sweet and delicious. Strawberries are tossed with a small amount of spiced rum and vanilla and it’s topped of with a cinnamon lemon crumble.
600g frozen strawberries, sliced
2 tsp cornstarch
1/4 cup brown sugar
1 tsp vanilla
2 Tbsp spiced rum *optional
1/2 cup all purpose flour
1/4 cup quick oats
2 Tbsp brown sugar
1/2 tsp cinnamon
1/4 cup butter, cubbed
1 lemon, zested
Preheat oven to 400 degrees F.
Filling: Mix all ingredients together until thoroughly combined. Place into 9” pie dish, set aside.
Crumble: Mix together flour, oats, sugar and cinnamon. Add butter and mix with your hands until the mix is moist and crumbly. Mix in lemon zest. Sprinkle the crumble over top of the strawberry filling.
Bake for 55 minutes until filling is bubbling and topping is golden. Let cool for 5 minutes before serving. Optional: Serve with vanilla ice cream!
Spiced rum is optional, but does add a nice flavour to it.
