This isn't your typical cookie recipe, but trust me it is a delicious one. If you aren't sure about the tahini flavour it is not to over powering. This is also a sneak peak book recipe.
1/2 cup tahini
1/4 cup honey
2 Tbsp canola oil
1/4 cup cocoa powder, sifted
2 Tbsp whole wheat flour
1/4 tsp baking soda
1/8 tsp salt
1/3 cup chunky chocolate chips
pinch of flaky salt
Preheat oven to 350˚F. Line baking sheet with parchment paper.
In bowl whisk together egg, tahini, honey and oil. Add in flour, sifted cocoa powder, baking soda, salt. Mix thoroughly. Fold in chocolate chips.
Spoon onto baking sheet, makes 6 large cookies or 8 medium sized. Sprinkle with coarse salt.
Bake for 8-10 minutes. Let cool fully before moving. Enjoy!
