Veggie Pasta in 10 Minutes

This is one of my favourite pasta sauces to whip up quickly. So delicious and quick to make. Enjoy! It is also vegan if you don't put the cheese on top!


Ingredients

1/2 onion, diced

1 bell pepper, diced

1 cup mushrooms, sliced

1 garlic clove, minced

1 tsp salt

1 1/2 tsp chilli powder

1 Tbsp paprika

1/2 tsp dried thyme

1 cup canned diced tomato

1/4 cup pasta water

1/4 cup shredded cheese (optional)

2 Tbsp fresh herbs (oregano, parsley or basil)


In large pot of boiling salted water, cook pasta according to package directions. Before draining remember to save 1/4 cup pasta water.


Heat oil in pot, add onion, pepper, mushrooms, garlic, salt, paprika, thyme and chilli powder. Cook for 4 minutes until veggies are tender. Add lemon juice, tomato and pasta water. Cook for 2 minutes. Stir in shredded cheese right before serving. Garnish with fresh herbs.
